  • Total Time: 33 minutes

Ingredients

– 1 sheet frozen puff pastry for providing structure and crunch

– 1 large egg

– 1 cup whole milk ricotta cheese for adding creaminess and flavor

– 1/4 cup minced fresh flat-leaf parsley

– 1 tablespoon minced fresh chives

– 1 teaspoon lemon zest

– 1 teaspoon fresh lemon juice

– 1 teaspoon minced fresh mint (plus more for garnish)

– 1/4 teaspoon garlic powder

– 1/4 teaspoon freshly cracked black pepper (or 1/8 teaspoon ground black pepper)

– 1/8 teaspoon red pepper flakes (adjust to taste)

– About 1 pound assorted heirloom tomatoes sliced for bringing freshness and color

– High-quality extra-virgin olive oil for drizzling

– Flaky sea salt for sprinkling

Instructions

1-Preheat the oven: Preheat the oven to 425ΒΊF and line a baking sheet with parchment paper.

2-Unfold the thawed puff pastry: Unfold the thawed puff pastry onto the parchment and roll it out 1 to 2 inches larger on all sides.

3-Transfer the pastry to the baking sheet: Transfer the pastry to the baking sheet, score a 1/2-inch border around it without cutting through, and poke the inner area with a fork.

4-Brush the outer edges: Brush the outer edges with the beaten egg to help it golden nicely.

5-Bake the pastry: Bake for 18 to 20 minutes until the pastry is golden brown, then let it cool.

6-Mix the ricotta cheese: In a bowl, mix the ricotta cheese with parsley, chives, lemon zest, lemon juice, mint, garlic powder, black pepper, and red pepper flakes.

7-Spread the ricotta mixture: Spread the ricotta mixture evenly over the cooled crust.

8-Top with sliced heirloom tomatoes: Top with sliced heirloom tomatoes, drizzle with extra-virgin olive oil, and sprinkle with flaky sea salt and cracked black pepper.

9-Add fresh herbs for garnish: Add fresh herbs for garnish and serve right away.

Notes

🍽️ If the tart puffs too much in the center, gently press it down after baking along the scored edges.
🌿 Puff pastry thaws quickly and can be rolled out larger for a bigger tart.
🌱 Fresh mint adds a unique flavor twist that enhances the overall dish.
⏳ Prepare crust and ricotta mixture ahead; assemble when ready to serve.
