Ingredients

1 whole chicken, about 4 pounds
½ lemon
1 stick (8 tablespoons) unsalted butter, softened
1 cup minced fresh mixed herbs (rosemary, tarragon, dill, parsley, cilantro, basil)
4 scallions, white and light green parts minced
Fine sea salt and freshly ground black pepper
2 tablespoons olive oil
1 to 2 slices stale bread
1 small onion, sliced
1 bay leaf
⅔ cup white wine or water
1 to 2 teaspoons sherry vinegar (optional)

Instructions

1. Preheat oven to 450°F with a rack in the lower third of the oven. Zest the lemon.
2. Mix the softened butter with herbs, minced scallions, lemon zest, salt, and pepper. Reserve half of the herb butter for future use.
3. Heat olive oil in a Dutch oven or oven-safe pot. Spread some herb butter on a slice of stale bread, place it buttered side up in the pot.
4. Loosen the chicken skin, spread most herb butter under the skin, and rub the rest on the outside. Season chicken with salt and pepper.
5. Stuff chicken cavity with reserved herb stems, scallion greens, and squeezed lemon half. Place chicken breast side up on the bread.
6. Add sliced onion and bay leaf around the chicken. Pour wine or water into the pot.
7. Roast chicken for 50 to 60 minutes, adding water if needed, until it reaches an internal temperature of 165°F.
8. Remove chicken, let rest for 10 minutes. Skim fat from juices, stir in sherry vinegar.
9. Carve chicken and serve with pan juices and bread soaked in jus.
