Ingredients

1 chicken, about 4 pounds ( kg), at room temperature
½ lemon
1 stick unsalted butter (8 tablespoons; 4 ounces; 113 grams), very soft
About 1 cup (40 grams) loosely packed minced mixed fresh herbs (e.g., rosemary, tarragon, dill, parsley, cilantro, basil)
4 scallions, white and light green parts minced, dark green parts reserved
Fine sea salt and freshly ground black pepper
2 tablespoons olive oil
1 or 2 slices stale bread
1 small onion, sliced
1 bay leaf
⅔ cup (160 ml) white wine or water
1 to 2 teaspoons sherry vinegar (optional)
2 cloves garlic, minced (optional)

Instructions

1. Preheat the oven to 450°F (230°C) and position oven rack in the lower third.
2. Grate lemon zest into a small bowl and reserve the lemon half.
3. Mix softened butter, minced herbs, minced scallions, salt, pepper, and minced garlic if using.
4. Divide the herb butter in half, wrap one half tightly in plastic wrap, and freeze for future use.
5. Pour olive oil into a Dutch oven or heavy pot and coat the sides. Spread some herb butter on one side of the stale bread and place it in the pot, buttered side up.
6. Loosen the chicken skin and spread most of the herb butter under the skin. Pat the skin dry and spread remaining herb butter over it.
7. Season the chicken with salt and pepper. Stuff the cavity with herb stems, dark green scallion parts, and the lemon half. Squeeze juice over chicken.
8. Place chicken breast side up on the bread in the pot. Add sliced onion and bay leaf around the chicken. Pour wine or water around the chicken.
9. Roast uncovered for 50 to 60 minutes until chicken reaches 165°F (74°C) and juices run clear.
10. Remove chicken and let rest for 10 minutes.
11. Skim fat from pan juices, discard bay leaf, and stir in sherry vinegar if desired.
12. Carve chicken and serve with pan juices and bread.
