Ingredients

– 8 large eggs

– 1 cup cottage cheese

– ΒΌ teaspoon black pepper

– ΒΌ teaspoon garlic powder

– ΒΌ teaspoon onion powder

– Β½ cup shredded cheese

– 1 cup mix-ins of choice

Instructions

1-Preheat oven: Preheat oven to 350Β°F (175Β°C) and lightly grease a silicone muffin tray.

2-Blend ingredients: In a high-powered blender, combine eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder. Blend until completely smooth.

3-Divide mixture: Divide the blended egg mixture evenly among the cavities of the prepared silicone muffin tray, pouring about ΒΌ cup of mixture into each cavity.

4-Add toppings: Top each filled cavity with shredded cheese and your desired mix-ins. Gently stir the toppings into the egg mixture in each cup using a spoon. Optionally, sprinkle a little extra cheese on top of each.

5-Bake: Bake for 18 to 22 minutes, or until the egg bites are no longer jiggly in the center and appear fully set.

6-Cool and remove: Allow the egg bites to cool slightly in the tray before carefully removing them.
