1 cup BBQ sauce

1 (20 ounce) can pineapple slices in juice (not heavy syrup)

ΒΌ cup less sodium soy sauce

2 teaspoons sesame oil

2 teaspoons minced garlic

1 heaping teaspoon minced fresh ginger

2 pounds boneless skinless chicken breasts and thighs

2 tablespoons vegetable oil

4 green onions, thinly sliced

3 cups cooked long grain white rice

Instructions

1-Strain and reserve the juice from the can of pineapple slices. Set aside for use in the marinade.

2-Combine 1 cup BBQ sauce, Β½ cup of the reserved pineapple juice, ΒΌ cup less sodium soy sauce, 2 teaspoons sesame oil, 2 teaspoons minced garlic, and 1 heaping teaspoon minced fresh ginger in a small bowl.

3-Measure out and reserve Β½ cup of the marinade for later basting. Pour the remaining marinade over the 2 pounds of boneless skinless chicken breasts and thighs in a plastic storage bag and refrigerate for 2 to 8 hours.

4-Preheat your grill to medium-high heat. Grill the chicken, basting with the reserved marinade during the last 5 minutes of cooking until the internal temperature reaches 165 degrees F.

5-Brush both sides of the pineapple slices with 2 tablespoons vegetable oil and add to the grill towards the end of cooking time. Grill for about 2 minutes per side until softened with grill marks.

6-Garnish the grilled chicken with 4 green onions, thinly sliced, and serve over 3 cups cooked long grain white rice.
