1/4 to 1/2 teaspoon red pepper flakes (optional)
2 teaspoons arrowroot powder or cornstarch
1 to 2 pounds ground beef
1 tablespoon olive or avocado oil
2 to 4 cloves garlic, minced
1 to 2 teaspoons grated fresh ginger
1 medium red bell pepper, diced
1/2 cup shredded carrots
8 oz can water chestnuts, chopped (optional)
3 to 4 green onions, sliced
1/3 cup chopped cilantro (optional)
2 teaspoons sesame seeds
Kosher salt and black pepper, to taste
Boston Bibb lettuce leaves
Optional: steamed rice, quinoa, sriracha, kimchi
Instructions
1. Whisk the sauce ingredients together: sweetener, coconut aminos, vinegar, sesame oil, red pepper flakes, and cornstarch. Set aside.
2. Heat oil in a skillet over medium-high. Add ground beef, cook until browned.
3. Stir in garlic and ginger, cook for 1–2 minutes until fragrant.
4. Add bell pepper, carrots, and water chestnuts; sauté for 3–4 minutes.
5. Pour sauce over beef mixture, simmer for 2–3 minutes until thickened. Adjust seasoning.
6. Stir in green onions and cilantro (if using).
7. Spoon mixture into lettuce cups, garnish with sesame seeds. Serve immediately with optional sides.
