Ingredients

– 4 boneless skinless chicken breast halves (6 oz each)

– 1/3 cup olive oil, plus extra for brushing the grill

– 1 tablespoon lemon zest

– 1/3 cup lemon juice

– 4 cloves garlic, minced (about 1 1/2 tablespoons)

– 2 teaspoons dried oregano

– 1/2 teaspoon dried basil

– 1/2 teaspoon dried thyme

– 1/2 teaspoon crushed rosemary

– About 1 teaspoon salt

– About 1/2 teaspoon pepper

– Fresh parsley for serving

Instructions

1-Pound thicker parts of chicken breasts to an even thickness to help them cook uniformly.

2-In a small bowl, whisk together the 1/3 cup olive oil, lemon zest, lemon juice, minced garlic, oregano, basil, thyme, rosemary, salt, and pepper.

3-Place chicken in a gallon-size resealable bag. Pour in the marinade, seal the bag, press out air, and rub marinade over the chicken.

4-Refrigerate and marinate for 2 to 5 hours, flipping the bag halfway through if possible, to let those flavors soak in.

5-Preheat grill over medium-high heat (about 425 to 450°F). Lightly brush grill grates with olive oil to keep things from sticking.

6-Grill chicken for about 4 minutes per side, or until an instant-read thermometer reads 160 to 165°F.

7-Remove chicken from the grill and let rest for 5 minutes before serving.

8-Garnish with fresh parsley to add a pop of color and extra taste.
