ΒΌ cup extra virgin olive oil

Β½ teaspoon dijon mustard

ΒΌ teaspoon garlic powder

Β½ teaspoon coarse salt

ΒΌ teaspoon ground black pepper

1 cup cherry tomatoes

Β½ red onion thinly sliced

4 ounces Gorgonzola cheese

2 heads endive lettuce

6 cups mixed spring greens

1 corn on the cob

1 tablespoon extra virgin olive oil for drizzling corn

2 tablespoons basil leaves minced

2 tablespoons parsley minced

1 clove garlic minced

1 tablespoon lemon zest

3 tablespoons balsamic vinegar

Β½ cup extra virgin olive oil

Β½ teaspoon dijon mustard

Dash of salt and fresh ground black pepper

Instructions

1-Marinate the steak: Combine the marinade ingredients in a medium bowl. Place the steak in a resealable bag, pour the marinade over it, seal, and shake to coat. Refrigerate for 30 minutes.

2-Make gremolata: Mix basil, parsley, garlic, and lemon zest in a small bowl; set aside.

3-Grill corn: Remove corn husk; drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper. Grill over medium-high heat for 10 minutes until cooked. Cool, then slice kernels off the cob.

4-Grill steak: Cook the marinated steak on a preheated grill or skillet over medium-high heat for 4 5 minutes per side for rare to medium-rare. Let it rest for 5 minutes, then slice thinly against the grain.

5-Make vinaigrette: Whisk together balsamic vinegar, Β½ cup olive oil, dijon mustard, salt, and pepper.

6-Assemble salad: In a large bowl, toss mixed greens, endive, tomatoes, Gorgonzola, grilled corn, and red onion with half the vinaigrette and half the gremolata.

Notes

πŸ§€ Substitute Gorgonzola with feta or blue cheese to suit your taste.
⏳ Extend marinating time for a deeper, richer steak flavor.
πŸ— Replace steak with chicken for a lighter protein option.
πŸ₯— Use arugula or spinach instead of endive for a different green base.
