– Chopped or thinly sliced English cucumber, unpeeled (amount as desired)
– Artichoke hearts, quartered (amount as desired)
– Kalamata olives (amount as desired)
– Chopped tomatoes (amount as desired)
– Fresh dill (to taste)
– Crumbled feta cheese (to taste)
Instructions
1-First, pound the chicken breasts to an even thickness for uniform cooking. Then, whisk the marinade ingredients together until combined and place the chicken in a container, pouring the marinade over it. Cover and refrigerate for at least 4 hours, or up to 2 days, to let the flavors soak in.
2-Next, preheat your grill to 450°F. Remove the chicken from the marinade, pat it dry, and grill for about 5 minutes per side until the internal temperature reaches 165°F.
3-While the chicken cooks, let it rest for 5 minutes after grilling, then slice it thinly. Gently warm the pita pockets to make them pliable.
4-Stuff the pitas with the sliced chicken and your desired toppings, such as baby spinach or shredded romaine lettuce, thinly sliced red onion, chopped English cucumber, quartered artichoke hearts, Kalamata olives, and chopped tomatoes.
5-Finally, drizzle with tzatziki sauce and garnish with fresh dill and crumbled feta cheese. Serve immediately for the best taste and texture.
