2 lbs chicken wing pieces
2 cups buttermilk
3 garlic cloves, smashed
2 teaspoons kosher salt
Canola or grapeseed oil, for brushing grill
1 tablespoon extra-virgin olive oil
2 tablespoons unsalted butter, melted
2 garlic cloves, grated or pressed finely
1 teaspoon coarsely cracked black peppercorns
1 cup finely grated pecorino romano cheese
1/3 cup fresh parsley, chopped
Salt and additional black pepper to taste

Instructions

1. Combine chicken wings, buttermilk, smashed garlic, and kosher salt in a large bowl. Refrigerate, covered, for at least 4 hours or overnight to brine.
2. Preheat the grill to create two heat zones: direct high heat and indirect cooler heat.
3. Remove wings from brine and place on the indirect heat side. Grill for approximately 5 minutes per side until cooked through, ensuring the internal temperature reaches 165°F (74°C).
4. Move wings to direct heat side and grill for an additional 2 minutes per side to achieve a crispy, charred exterior.
5. Meanwhile, prepare the sauce by heating olive oil and melted butter in a saucepan over medium heat. Add grated garlic and cracked black peppercorns, stirring constantly to prevent burning. Remove from heat and mix in half the grated cheese and chopped parsley. Season with salt as desired.
6. Toss grilled wings thoroughly in the butter sauce to coat evenly. Plate wings and sprinkle remaining cheese and parsley on top, finishing with freshly ground black pepper. Serve immediately.
