Ingredients

– 2 cups shredded Monterey or pepper jack cheese

– 2 cups shredded cheddar cheese

– 1 (7 ounce) can chopped green chilies, drained

– 3/4 cup whole milk

– 1/2 cup all-purpose flour

– 2 large eggs

– Cajun seasoning for garnish

– chopped parsley for garnish

Instructions

1-Preheat oven to 350 degrees F.

2-Butter or line an 8 x 8 inch baking dish, preferably glass, with parchment paper leaving an overhang for easy removal.

3-Combine the shredded cheeses and add half of the mixture to the bottom of the baking dish.

4-Top with the drained green chilies, then add the remaining cheese on top and gently press into the pan.

5-Whisk together the milk and eggs, add the flour, and whisk well. Drizzle the mixture evenly over the cheese.

6-Bake uncovered at 350 degrees F for about 30 minutes or until lightly browned on top.

7-Remove from oven and let cool. Garnish with Cajun seasoning and parsley if desired.

8-Let cool further and cut into bite-sized squares.
