Ingredients
– 1 batch homemade pizza dough or 1 pound store-bought pizza dough
– ⅔ cup pizza sauce or marinara sauce
– one 32-ounce can whole tomatoes, drained and crushed
– ½ teaspoon dried oregano
– 8 ounces (about 2 packed cups) grated low-moisture part-skim mozzarella cheese
– ½ cup thin, 1-inch strips of roasted red pepper (jarred or fresh)
– ½ cup quartered marinated or jarred artichokes, halved lengthwise
– 15 pitted Kalamata olives, halved lengthwise
– ½ cup (2 to 3 ounces) crumbled feta cheese
– Torn fresh basil leaves for optional garnish
– Red pepper flakes for optional garnish
Instructions
1-Roll out the pizza dough on a lightly floured surface to form two 11-inch circles, adjusting for thickness to get your ideal crispy crust.
2-Spread ⅔ cup of pizza sauce or crushed tomatoes evenly over the dough, leaving a border, and sprinkle ½ teaspoon of dried oregano for that classic Mediterranean flavor.
3-Top with 8 ounces of grated mozzarella, followed by ½ cup roasted red pepper strips, ½ cup quartered artichokes, 15 halved Kalamata olives, and ½ cup crumbled feta.
4-Bake on the top rack until the crust turns golden and the cheese bubbles, about 10-12 minutes use a baking stone if available for faster results.
5-Remove from the oven, garnish with torn fresh basil and red pepper flakes if desired, then let it cool slightly before slicing.
