1 teaspoon ground cinnamon for enhancing taste
1/4 teaspoon ground allspice for enhancing taste
1/4 teaspoon ground cloves for enhancing taste
1/4 teaspoon ground nutmeg for enhancing taste
Small pinch of ground black pepper for enhancing taste
1/4 teaspoon salt for enhancing taste
3/4 cup unsalted butter, melted adds moisture and flavor
1/2 cup packed light or dark brown sugar adds moisture and flavor
1/2 cup granulated sugar adds moisture and flavor
1/3 cup unsulphured molasses (not blackstrap) adds moisture and flavor
1 large egg, room temperature adds moisture and flavor
1 teaspoon pure vanilla extract adds moisture and flavor
6 ounces full-fat brick cream cheese, softened to room temperature
2 tablespoons unsalted butter
1 and 1/2 cups confectioners’ sugar
1 teaspoon pure vanilla extract
Small pinch each of ground ginger, cinnamon, and allspice
Optional garnish: sprinkles
Instructions
1-First, preheat your oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper, leaving an overhang for easy removal. This step sets the stage for hassle-free baking and helps with cleanup later.
2-Next, in a large bowl, whisk together the flour, baking soda, ground spices including ginger, cinnamon, allspice, cloves, nutmeg, a small pinch of black pepper, and salt. This ensures the spices are evenly distributed for that bold holiday flavor. In a separate bowl, combine the melted butter, brown sugar, granulated sugar, and unsulphured molasses until smooth, creating a rich base for the dough.
3-Then, add the egg and vanilla extract to the wet mixture, stirring well to incorporate. Gradually stir the wet ingredients into the dry ones until the dough is thick and shiny be careful not to overmix. Press the dough evenly into the prepared pan; it might seem thin, but it will rise slightly during baking. Bake for 23 to 26 minutes, until the top is set but still soft, and a toothpick comes out with moist crumbs.
4-After baking, cool the bars in the pan for at least one hour. For the frosting, beat the cream cheese and butter together until smooth, then gradually add confectioners’ sugar, spices, and vanilla extract until creamy. Spread it over the cooled bars, add sprinkles if desired, and chill for at least 30 minutes before slicing.
