Instructions

1-First, bring a large pot of heavily salted water to a boil. Then, cook the 1 pound dried spaghetti or dried thin Chinese wheat noodles or dried Japanese ramen noodles in the boiling water until tender but not al dente, which helps achieve the soft texture we recommend.

2-While the noodles cook, mince the 8 cloves garlic and prepare any optional items like grating the 1 ounce Parmesan cheese or thinly slicing the 3 medium scallions. In a small bowl, combine the 2 tablespoons oyster sauce, 1 tablespoon fish sauce, and 1 tablespoon soy sauce to create the flavorful base.

3-Next, in a large frying pan, melt the 4 tablespoons unsalted butter over medium heat, add the minced garlic, and cook until fragrant but not browned. Stir in the sauce mixture, then transfer the cooked noodles directly into the pan or drain and rinse if using Asian noodles before adding.

4-Add half a cup of the cooking water and toss constantly over medium heat until the sauce thickens and coats the noodles, about 1 to 2 minutes. Finally, remove from heat, add the 1 ounce grated Parmesan cheese and half of the sliced scallions, and toss to combine.
