Ingredients

– 1 cup warm water (100 to 110°F)

– 2 1/4 teaspoons instant yeast

– 1 tablespoon granulated sugar

– 3 tablespoons olive oil or melted butter

– 1 teaspoon salt

– 1 teaspoon garlic powder

– 3 1/3 cups bread flour (or all-purpose flour as a substitute), plus extra for handling

– 5 tablespoons unsalted butter melted

– 3 garlic cloves minced or 1/2 teaspoon garlic powder

– 1 teaspoon Italian seasoning or a blend of dried oregano, basil, and/or parsley

– 1/4 teaspoon salt

– 1/4 cup grated Parmesan cheese (optional after baking)

– 2 tablespoons chopped fresh parsley

Instructions

1-Proof yeast by combining warm water, yeast, and sugar in a bowl. Stir gently and wait 5 to 10 minutes until foamy. This shows your yeast is alive and ready.

2-Mix olive oil or butter, salt, garlic powder, and half the flour into the yeast mixture. Stir until combined and smooth. No lumps here keeps the dough even.

3-Add remaining flour and beat until dough forms and pulls from bowl sides. If too sticky, add a sprinkle more flour; if dry, a teaspoon water. Aim for soft and pliable.

4-Knead dough for 5 minutes either in a mixer with dough hook or by hand until slightly tacky. It should pass the windowpane test: stretch a small piece thin enough to see light through without tearing. This means gluten is developed for great structure.

5-Place dough in an oiled bowl, cover, and let rise for 2 hours or until doubled. A warm spot speeds it up.

6-Punch down dough, shape into a 16-inch log, cut into 16 pieces. Roll each into an 8-inch rope, then tie into knots. Do not stress perfection; rustic looks charming.

7-Let shaped knots rest for 30 to 45 minutes, covered, until puffy.

8-Preheat oven to 400°F (204°C). Line a baking sheet with parchment.

9-Prepare garlic herb butter topping by mixing melted butter with garlic, Italian seasoning, and salt. This is your flavor star.

10-Brush knots generously with garlic butter before baking. Save some for after.

11-Bake for 20 to 23 minutes or until golden brown. Ovens vary, so check at 20.

12-Brush with remaining garlic butter right out of the oven. Sprinkle Parmesan and parsley if using. The heat melts cheese perfectly.

13-Serve warm with marinara sauce or alone. They shine at potlucks!
