Ingredients
– 1½ pounds sirloin steak or New York strip
– 1½ pounds Yukon Gold, russet, or baby potatoes
– 2 to 3 tablespoons olive oil
– 4 to 5 tablespoons unsalted butter
– 4 to 5 cloves garlic, minced
– 1 teaspoon Italian seasoning
– ½ teaspoon paprika (optional)
– ½ teaspoon salt
– ½ teaspoon black pepper
– 1 to 2 tablespoons Worcestershire sauce (optional for marinade)
– Optional: 1 tablespoon soy sauce or Sriracha
– Fresh herbs like rosemary, parsley, and thyme for garnish
– Optional garnishes: fresh parsley, red pepper flakes, or grated Parmesan cheese
Instructions
First Step: Prepare and Marinate
Begin by mixing half of the dry seasonings: salt, pepper, garlic powder, onion powder, Italian seasoning, and optional paprika, along with Worcestershire sauce and/or soy sauce if using. Toss the cubed steak in this marinade and let it sit while you prep the potatoes. This enhances the flavor and tenderness of the meat.
Second Step: Parboil the Potatoes
Bring a pot of boiling water to a boil. Add the peeled and cut potatoes and parboil for 5 to 6 minutes until they are just tender but not fully cooked. Drain the potatoes and allow them to cool slightly. Toss them with the remaining seasoning mix and 1 to 2 tablespoons of olive oil for flavor and crispiness when cooking.
Third Step: Sear the Steak
Heat a large cast iron or heavy skillet over medium-high heat. Add a tablespoon of olive oil and 2 tablespoons of butter. Place the marinated steak cubes in a single layer and sear for 5 to 7 minutes, stirring occasionally. You want a nice brown crust without overcooking the interior. Once browned, remove the steak from the pan and set aside.
Fourth Step: Cook the Potatoes
In the same skillet, add the seasoned potatoes. Cook over medium heat, stirring occasionally, for 10 to 15 minutes until golden and tender. If the potatoes start to brown too fast while still firm inside, reduce the heat to medium-low, add 2 tablespoons of warm water, cover the pan, and cook for a few additional minutes until done.
Fifth Step: Build the Garlic Butter Sauce and Combine
Add the remaining butter to the skillet with potatoes, along with minced garlic and fresh or dried herbs. Cook for about 30 seconds until fragrant. Return the steak cubes to the skillet and toss everything to evenly coat with the garlic butter sauce.
Final Step: Season, Garnish, and Serve
Adjust seasoning to taste with salt and pepper. Garnish with chopped fresh parsley, red pepper flakes, or grated Parmesan cheese if desired. Serve immediately for the best balance of juicy steak, flavorful potatoes, and rich garlic butter.
