18 ounces barbecue sauce

¼ cup honey

¼ cup brown sugar

3 tablespoons garlic butter

8 hard taco shells

8 slices pepper jack cheese

1 cup canned corn, drained and rinsed

1 cup canned black beans, drained and rinsed

1 ripe mango, peeled and chopped

½ red onion, diced

1 jalapeño, diced, seeds removed

2 tablespoons lime juice

¼ cup chopped fresh cilantro

1 cup cotija cheese or feta

½ cup chopped fresh cilantro

Instructions

First Step: Prepare Ingredients and Sauce
Gather all ingredients. In a small saucepan or bowl, combine barbecue sauce, honey, brown sugar, and garlic butter. Gently warm over low heat while stirring to dissolve sugars and blend flavors. Set aside your mango salsa by mixing mango, red onion, jalapeño, lime juice, and cilantro. Refrigerate to keep fresh.

Second Step: Cook the Chicken
Place chicken breasts or thighs in a slow cooker. Pour the prepared honey BBQ mixture over the chicken, ensuring it’s evenly covered.
