Ingredients
1 pound (about 2 large) boneless, skinless chicken breasts or 300g boneless chicken thighs
2 tablespoons olive oil
1 ½ teaspoons dried parsley flakes
1 ½ teaspoons garlic powder
1 teaspoon fine sea salt
½ teaspoon ground black pepper
Optional: 1 ½ teaspoons Cajun seasoning or paprika, ½ teaspoon onion powder, ½ teaspoon thyme
8 ounces (about 225g) spaghetti or other pasta
½ cup (1 stick) salted butter
6 medium cloves garlic, minced
½ cup freshly grated Parmesan cheese, divided
1 cup reserved starchy pasta cooking water
1 tablespoon diced fresh parsley (optional)
1 tablespoon lemon juice (optional)
Optional additions: red pepper flakes, vegetables, or other proteins
Instructions
1. Boil a large pot of salted water and cook the pasta until al dente according to package instructions. Reserve 1 cup of the starchy cooking water before draining.
2. Mix garlic powder, parsley, sea salt, black pepper, and optional seasonings. Add olive oil and stir. Coat chicken with this mix, marinate for 30 minutes if possible.
3. Heat large skillet on medium-high, cook chicken until browned and at 165°F. Rest for 5 minutes.
4. Reduce skillet heat, melt butter, add garlic, sauté briefly. Add lemon juice and chili flakes if using.
5. Add pasta to skillet, coat with garlic butter. Stir in ¼ cup Parmesan and pasta water as needed.
6. Slice the chicken, add to pasta. Top with remaining Parmesan and parsley.
