Ingredients
3 tablespoons butter, divided
2 large eggs, whisked
2 medium carrots, peeled and diced
1 small white onion, diced
1/2 cup frozen peas
3 cloves garlic, minced
Salt and black pepper to taste
4 cups cooked and chilled rice (preferably short-grain white rice)
3 green onions, thinly sliced
3 to 4 tablespoons soy sauce, or more to taste
2 teaspoons oyster sauce (optional)
1/2 teaspoon toasted sesame oil
Instructions
1-First, heat 1.5 teaspoons of butter in a sauté pan over medium-high heat until it’s melted, then add the whisked eggs and scramble them until cooked through, breaking into small pieces. Set those aside for now.
2-Next, add 1 tablespoon of butter to the pan and melt it before tossing in the carrots, onions, peas, and garlic; season with salt and pepper, and sauté for about 5 minutes until the veggies are soft.
3-Increase the heat to high, add the remaining 1.5 tablespoons of butter and stir until melted. Then, mix in the chilled rice, green onions, soy sauce, and oyster sauce if you’re using it. Keep sautéing for 3 minutes, stirring now and then to let the rice brown a bit for that crispy edge we all love.
4-Finally, fold the eggs back in, take the pan off the heat, and stir in the toasted sesame oil before tasting and adjusting seasonings.
