Ingredients
– 6 tablespoons oil
– 3 pounds medium yellow onions, halved and thinly sliced
– ¾ teaspoon salt
– 1½ tablespoons balsamic vinegar
– 1½ tablespoons tamari
– 1½ tablespoons fresh thyme leaves
– 3 garlic cloves, minced
– 3 tablespoons all-purpose white flour
– 1 cup dry white wine
– 6 cups vegetable broth
– baguette slices for topping
– Gruyère cheese for topping
– aged cheddar for topping
– Parmesan cheese for topping

– a pinch of red pepper flakes (optional) for topping
Instructions
1-Heat 6 tablespoons of oil in a large pot over medium heat. Add the 3 pounds of thinly sliced medium yellow onions, ¾ teaspoon salt, and a dash of pepper; toss to combine.
2-Reduce the heat to low and cook for about 40 minutes, stirring every few minutes until the onions are very soft.
3-Increase the heat to medium and cook for 15 to 20 more minutes until the onions turn golden brown.
4-Add 1½ tablespoons balsamic vinegar, 1½ tablespoons tamari, 1½ tablespoons fresh thyme leaves, and 3 minced garlic cloves; stir well.
5-Sprinkle 3 tablespoons of all-purpose white flour over the onions, stir, and cook for 2 minutes.
6-Stir in 1 cup of dry white wine and cook until it evaporates, about 2 minutes.
7-Add 6 cups of vegetable broth and simmer uncovered over medium heat for 30 minutes.
8-Preheat the oven to 450°F. Place baguette slices topped with Gruyère cheese, aged cheddar, and/or Parmesan cheese on a baking sheet and bake until toasted and the cheese is melted, 8 to 10 minutes.
9-Ladle the soup into bowls, top each with a toasted baguette slice, fresh thyme, and a pinch of red pepper flakes if desired. Serve immediately.
