1-Wash, cap (remove green tops), and drain whole strawberries thoroughly to start the process.
2-Freezing Methods: Without sugar, spread berries in a single layer on a baking sheet or jelly roll pan and freeze until solid, which takes 1-2 hours. Then, transfer to plastic freezer bags, pressing out air before sealing.
3-With sugar, add ¾ cup sugar to 1 quart of prepared berries and stir until mostly dissolved. Let the mixture stand for 15 minutes before packing into containers.
4-Packaging and Headspace: For berries without sugar or liquid, allow ½ inch headspace at the top. For those with sugar, syrup, juice, or crushed fruit, allow 1 inch in wide-top containers, ¾ inch in narrow pint containers, or 1½ inches in narrow quart containers.
