2 slabs beef ribs or about 3 lbs meaty beef ribs
24 tablespoons olive oil
2 tablespoons dark brown sugar
2 teaspoons paprika
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin powder
1 to 1.5 teaspoons salt
1 teaspoon black pepper
Optional: 1 teaspoon chili powder
Optional: 2 teaspoons oregano
2 teaspoons garlic powder or 2 minced garlic cloves
1/4 to 1/2 cup apple cider vinegar
1 to 1 1/2 cups ketchup or tomato sauce
5 tablespoons to 1/2 cup brown sugar
2 teaspoons black pepper
2 teaspoons onion powder
2 tablespoons yellow mustard powder
1 teaspoon cayenne pepper
1 cup apple juice or water
Optional: 1 tablespoon Worcestershire sauce
Optional: Liquid smoke

Instructions

1. Remove the membrane from the ribs and trim excess fat. Pat dry with paper towels.
2. Rub ribs with olive oil and apply the rub evenly over all sides. Marinate in the refrigerator for 1 to 3 hours or overnight.
3. Mix all barbecue sauce ingredients in a bowl. Adjust thickness with water or apple juice.
4. Oven Method: Preheat oven to 250–325°F. Place ribs on a foil-lined baking sheet, cover tightly with foil, and bake for 2 to 4 hours as noted per temperature.
5. Remove foil, brush ribs with BBQ sauce, and broil or bake uncovered for 10–30 minutes until caramelized.
6. Grill Method: Preheat grill to 275°F using indirect heat. Place ribs meat-side down and cook for 2 hours, turning every 20 minutes.
7. In the last 10–20 minutes of grilling, baste with BBQ sauce until caramelized.
8. Ensure internal temperature reaches 200°F and let ribs rest before serving.
