½ cup chopped parsley
1 onion, minced
2 garlic cloves, minced
1½ teaspoons salt
½ teaspoon sweet paprika
½ teaspoon cayenne pepper
½ teaspoon ground pepper
1½ teaspoons allspice
½ teaspoon ground coriander
½ teaspoon cumin
½ teaspoon cinnamon
1 cup of lamb, minced (optional)
1 white bun or slice of bread soaked in water and squeezed dry or ½ cup plain breadcrumbs
1 teaspoon baking powder (optional)

Instructions

1. Finely chop or blend parsley, onion, and garlic into a paste.
2. In a large bowl, thoroughly mix the pasted vegetables with ground meat, spices, salt, and the chosen binding agent.
3. Shape the mixture onto soaked wooden skewers, forming kofta kebabs about ¾ to 1 inch thick.
4. Preheat a lightly oiled grill or pan to medium-high heat.
5. Grill the koftas for about 7-8 minutes per side until fully cooked and slightly charred.
6. Alternatively, bake at 425°F (220°C) for 20-25 minutes or pan-fry in a small amount of oil until browned and cooked through.
