Ingredients
12 ounces extra firm tofu (approximately 340 grams)
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons agave syrup
1 clove minced garlic
1 cup cooked white or brown rice (or cauliflower rice)
1/2 cup shredded or julienned carrots
1 cup chopped cucumbers
1 medium avocado, sliced
1/2 cup shredded or thinly sliced red cabbage
1 cup shelled edamame
1/2 cup diced fresh mango (optional)
1 tablespoon toasted sesame seeds
Microgreens or fresh greens
Pickled ginger
2 tablespoons sliced green onion (green parts only)
Soy sauce and wasabi (optional)
For the Spicy Sriracha dressing:
1/4 cup soaked raw cashews
1/4 cup water
1 tablespoon lemon juice
1 tablespoon sriracha
1 tablespoon tamari
1 tablespoon toasted sesame oil
Pinch of sea salt and black pepper
Instructions
1. Press the tofu to remove excess moisture and cut it into cubes.
2. Marinate the tofu in a mixture of soy sauce, rice vinegar, agave syrup, and minced garlic for about 10 minutes.
3. Cook the rice or prepare cauliflower rice and set aside.
4. Heat oil in a pan and fry the marinated tofu cubes until golden and crispy. Remove and set aside.
5. Prepare the Spicy Sriracha dressing: blend soaked cashews, water, lemon juice, sriracha, tamari, sesame oil, salt, and pepper until smooth.
6. In a bowl, layer the cooked rice, fried tofu, shredded carrots, cucumbers, avocado slices, red cabbage, edamame, and diced mango.
7. Drizzle with Spicy Sriracha dressing and garnish with toasted sesame seeds, microgreens, and pickled ginger.
8. Serve with soy sauce and wasabi on the side if desired.
