🍪 These Easter Cookie Bars are a delightful treat filled with colorful candies and chocolate chips, creating a festive dessert for any gathering.
🌈 Easy to make and crowd-pleasing, these bars keep things simple without the hassle of rolling out dough.

  • Total Time: 50 minutes
  • Yield: 18 to 36 bars 1x

Ingredients

Scale

2 sticks (226 grams) unsalted butter, at room temperature
1 cup (200 grams) granulated sugar
1 cup (220 grams) firmly packed golden brown sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
3 cups (360 grams) all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup (about 175 grams) pastel candy-coated chocolate pieces
1 cup (170 grams) mini semi-sweet chocolate chips
1/2 cup (90 grams) white chocolate chips
Additional candies and chocolate chips for topping (optional)

Instructions

1. Preheat the oven to 350°F (175°C). Line a 9×13-inch cake pan with foil, leaving an overhang on the sides for easy lifting, and spray thoroughly with nonstick cooking spray.
2. In a stand mixer or large bowl, beat the softened butter, granulated sugar, and brown sugar together until fluffy. Add eggs and vanilla extract, continuing to mix until fully incorporated.
3. Reduce mixer speed and gradually add flour, baking soda, and salt, mixing just until combined.
4. Fold in the candy-coated chocolates, mini chocolate chips, and white chocolate chips, reserving some for sprinkling on top.
5. Press the dough evenly into the prepared pan, then gently press the reserved candies and chips onto the surface for a decorative finish.
6. Bake for 30 to 35 minutes, or until the bars are set but not overly browned to retain a soft center. Avoid overbaking.
7. Let cool completely in the pan before cutting into bars. Depending on the size of pieces cut, this recipe yields between 18 to 36 bars.

Notes

💡 Line the pan with foil for easy removal and clean cuts; nonstick spray helps, too.
🏺 Using a metal pan ensures more even baking compared to glass.
🥄 Lightly top the bars with candies and chips to avoid uneven baking results.
