1/2 teaspoon baking soda
1/8 cup vegetable oil
1/4 cup natural peanut butter
1/2 cup plain unsweetened applesauce
1/2 cup pure pumpkin puree (optional)
1 large egg
1/2 cup plain Greek yogurt
1/4 cup natural peanut butter (for frosting)
1 tablespoon cornstarch (optional)
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large bowl, combine the flour and baking soda.
3. In another bowl, mix the vegetable oil, peanut butter, applesauce, and pumpkin puree until smooth. Add the egg and stir well.
4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
5. Pour the batter into a greased 8-inch pan.
6. Bake for 25 to 30 minutes, until a toothpick comes out clean.
7. Cool completely on a wire rack before frosting.
8. For the frosting, mix Greek yogurt, peanut butter, and cornstarch until smooth. Spread over the cooled cake.
