Measure the ingredients ahead of time: 7 ounces bittersweet chocolate chips and 2 tablespoons virgin coconut oil.

2-Second Step: Create a gentle double boiler
Pour about 1 to 2 inches of water into a small saucepan and bring it to a simmer over medium-low heat. Place the heatproof bowl over the pan so steam gently heats the bowl. Do not let the bowl touch the water; this keeps the chocolate from burning.

3-Third Step: Melt the chocolate carefully
Add the bittersweet chocolate chips to the bowl. Stir frequently with the silicone spatula as the chips soften. Keeping the heat low prevents seizing or burning. Aim for a smooth, glossy melt this usually takes around 3 to 5 minutes depending on the amount and your stovetop.

4-Fourth Step: Add the coconut oil
Once the chocolate is melted, stir in the 2 tablespoons virgin coconut oil. Continue stirring and let the mixture heat for about 1 minute so the oil fully dissolves into the chocolate. At this point the mixture should be fluid and shiny. Turn off the heat.

5-Fifth Step: Finish and serve
Ladle or spoon the warm mixture over ice cream, frozen fruit, or chilled cheesecake bites. It hardens into a shell within seconds as it hits the cold surface. If you want drizzles instead of a thick shell, let the mixture cool for a minute so it thickens slightly before using.
