Ingredients

– 3 pounds round steak or sirloin steak

– 1/2 to 1 large sweet onion

– 2 to 4 teaspoons minced garlic

– 1 to 2 teaspoons kosher salt

– 1 teaspoon black pepper

– 4 tablespoons unsalted butter

– 1 cup unsalted beef broth or beef stock

– 1-ounce packet au jus gravy mix

– 1 tablespoon cornstarch

– 2 tablespoons Worcestershire sauce

– 2 tablespoons olive or vegetable oil

– 1/4 cup cream of mushroom soup

– fresh herbs (parsley, rosemary, thyme)

– red pepper flakes

– red wine

Instructions

First Step: Prepare the Steak and Ingredients
Trim and cut 3 pounds of sirloin or round steak into 1-inch bite-sized pieces ensuring even cooking. Dice or thinly slice 1 large sweet onion and mince 3 garlic cloves to boost the aromatic base.

Second Step: Season the Steak Bites
Season the steak cubes evenly with 1 to 2 teaspoons kosher salt and 1 teaspoon black pepper. Toss gently to coat all pieces. If you prefer extra depth, you may sear the steak in olive oil over medium-high heat in batches until browned on all sides (about 2-4 minutes per batch), but this step is optional.

Third Step: Layer Ingredients in the Crockpot
Place diced onions at the bottom of the crockpot to create a flavor foundation. Arrange seasoned or seared steak bites evenly on top. Add the minced garlic scattered over the meat for maximum infusion.

Fourth Step: Add Liquids and Butter
Pour 1 cup of unsalted beef broth evenly over the steak and onions. For enhanced flavor, sprinkle the au jus gravy mix or add 2 tablespoons Worcestershire sauce now, if using. Distribute 4 tablespoons of sliced unsalted butter on top.

Fifth Step: Cook and Stir
Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours until steak bites are tender and flavorful. Stir gently once or twice if possible to blend flavors and melt butter thoroughly.

Final Step: Thicken Sauce and Serve
