Instructions
1-First, prep your ingredients: Slice the white onion, red potatoes, carrots, and celery, then mince the garlic. Toss these vegetables with 1 tablespoon of olive oil and the minced garlic to coat them evenly.
2-Next, brown the 1 1/2 pounds of lean ground beef in a skillet, seasoning it with 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, kosher salt, and black pepper. Stir in 2 tablespoons of Worcestershire sauce once browned.
3-Layer the beef over the vegetables in the slow cooker, then add 3 tablespoons of sliced butter on top for extra richness.
4-Sprinkle 1/2 cup of uncooked white rice over the beef layer evenly.
5-Pour a mixture of 1 (10-ounce) can condensed tomato soup and 1 1/2 cups water over the rice to cover everything nicely.
6-Cook covered on low for 6 to 7 hours or on high for about 4 hours. Once done, add 1 1/2 cups grated cheddar cheese on top, replace the lid, and turn off the crockpot to let the cheese melt gently.
