Ingredients
1 to 2 pounds (450 to 900 grams) chuck roast or beef stew meat
2 to 3 tablespoons vegetable oil (optional for browning)
1 tablespoon steak seasoning or a mix of garlic powder, onion powder, salt, and black pepper
1 medium onion, finely diced (optional)
2 teaspoons minced garlic (optional)
4 cups (960 ml) water or beef broth
4 teaspoons concentrated beef stock or 1 packet brown gravy mix and 1 packet au jus mix
2 teaspoons Worcestershire sauce (optional)
1 can (approximately 10.5 to 11 ounces or 300 grams) cream of mushroom soup (optional)
16 ounces (450 grams) dried homestyle egg noodles or 24 ounces (680 grams) frozen egg noodles
½ cup (120 ml) heavy cream (optional)
Salt and pepper to taste
Dried parsley or other fresh herbs for garnish (optional)
Instructions
1. Season the chuck roast or beef stew meat with steak seasoning, garlic powder, onion powder, salt, and pepper. Brown in vegetable oil over high heat if desired, then add to a 6-quart crockpot.
2. Add diced onion and minced garlic to the crockpot, if using.
3. Mix water or beef broth with concentrated beef stock, Worcestershire sauce, and cream of mushroom soup in a bowl; pour over the meat in the crockpot.
4. Cover and cook on low for 6 to 8 hours, or on high for 4 to 6 hours.
5. Remove the meat, shred with forks, and return to the crockpot. Stir to combine.
6. If using dried noodles, stir them into the crockpot. Cover and cook on low for 30 to 60 minutes, adding broth as needed.
7. Add heavy cream during the last 15 minutes of cooking, if desired.
8. Adjust seasoning with salt and pepper. Garnish with herbs before serving.
