– 4 sub rolls
– 1 lb (approximately 450 g) chicken tenderloins, tenderized
– 2 hearts romaine lettuce, washed, dried, and chopped
– Fresh grated parmesan cheese (quantity as desired)
– Juice of 1 lemon
– Caesar dressing for salad plus 1/2 cup (120 ml) for breading
– Breadcrumbs or panko crumbs for breading (quantity as needed)
– Flour for breading (quantity as needed)
– Avocado oil for frying (quantity as needed)
– 2 heads of garlic, roasted
– 1 tbsp (15 ml) finely chopped parsley
– 8 tablespoons (113 g) unsalted butter, softened
– 1/8 cup (15 g) grated fresh parmesan
– Salt and pepper to taste
Instructions
1-Preheat the oven to 350°F (175°C). Combine roasted garlic, parsley, softened butter, grated parmesan, salt, and pepper in a small bowl. Slice and hollow out sub rolls slightly. Spread the garlic butter inside the rolls and sprinkle additional parmesan on top. Arrange rolls open side up on a baking sheet and bake for 10-15 minutes until toasted. For extra crispiness, broil for 2-3 minutes.
2-Set up a breading station with three bowls: one with flour, one with Caesar dressing thinned with 2 tablespoons (30 ml) water, and one with breadcrumbs. Coat each chicken tenderloin in flour, then dip in the dressing mixture, and finally coat with breadcrumbs.
3-Heat avocado oil in a large pan over medium heat. Test the temperature by sprinkling breadcrumbs into the oil; if they sizzle, the oil is ready. Fry the coated chicken cutlets until golden brown on each side. Drain on paper towels to remove excess oil.
4-Toss the chopped romaine lettuce with Caesar dressing, fresh lemon juice, and parmesan cheese to enhance flavor.
5-Assemble the sandwiches by layering the crispy sub rolls with fried chicken cutlets, dressed romaine lettuce, and extra parmesan cheese. Serve immediately.
