๐Ÿ— This Simple Chicken Zucchini Alfredo Pasta combines lean chicken and fresh zucchini for a creamy, comforting meal.
๐Ÿ The dish is ready in just 30 minutes, making it perfect for nourishing weeknight dinners with minimal effort.

  • Total Time: 30 minutes

Ingredients

– 1 lb (450g) chicken cutlets or chicken tenders

– 1 teaspoon Italian seasoning

– 1 tablespoon (15ml) olive oil

– 8 oz (225g) fettuccini or other long cut pasta

– 2 tablespoons (28g) salted butter

– 1 medium zucchini or yellow summer squash, sliced

– 2 cloves garlic, minced

– 1 teaspoon dried oregano

– 1/4 teaspoon chili flakes (or to taste)

– 4 oz (115g) cream cheese, softened and cubed

– 1/2 cup (120ml) whole milk or heavy cream

– 1/4 cup (25g) freshly grated Parmesan cheese

– Salt and black pepper to taste

– 2 tablespoons chopped fresh basil or parsley

Instructions

1-Getting started with this creamy zucchini noodle chicken Alfredo is as easy as pulling out your favorite skillet. Begin by preparing the chicken: toss 1 lb (450g) of chicken cutlets with Italian seasoning, olive oil, salt, pepper, and chili flakes, then grill or sear until itโ€™s fully cooked to 165ยฐF. Once done, slice it and set it aside for later.

2-Next, cook the pasta: boil 8 oz (225g) of fettuccine in salted water until itโ€™s al dente, and donโ€™t forget to save about 1/2 cup of the pasta water. In a skillet, melt 2 tablespoons of butter and add the sliced zucchini, minced garlic, dried oregano, and chili flakes, cooking until the zucchini softens in about 5-7 minutes. This step brings out the veggiesโ€™ natural sweetness and blends the flavors nicely.

3-Now, for the sauce: stir in 4 oz (115g) of cubed cream cheese until it melts smooth, then whisk in 1/2 cup of whole milk or heavy cream and 1/4 cup of grated Parmesan cheese. If the sauce thickens too much, thin it with that reserved pasta water. Finally, combine the drained pasta with the sauce, toss in half the fresh herbs, and mix in the chicken before serving with the rest of the herbs on top.
