Instructions
1-First, prepare the ingredients by mincing the garlic and halving the cherry tomatoes.
2-Next, cook the pasta in salted boiling water until it’s al dente, which takes about 8-10 minutes depending on the type.
3-In a large pan, heat the olive oil over medium heat and add the minced garlic with ½ teaspoon salt, sautéing for about 5 minutes until it’s golden and fragrant.
4-Then, add the halved cherry tomatoes and another ½ teaspoon salt, cooking for 10 to 15 minutes while stirring until they soften and release their juices.
5-Pour in the dry white wine and simmer for about 5 minutes to blend the flavors.
6-Stir in the chili flakes and tomato paste for extra depth.
7-Now, add the heavy cream and mix well to create that creamy base.
8-In a separate bowl, whisk the flour with a bit of water to make a slurry, then slowly stir it into the sauce and cook for 5 to 10 minutes until it thickens.
9-Mix in the chopped parsley, smoked paprika, garlic powder, salt, and pepper to finish the sauce.
10-Combine the sauce with the cooked rigatoni pasta and simmer together for 5 minutes, keeping the pasta al dente.
11-Remove from heat, cover, and let it rest for 5 minutes so the flavors meld.
12-Serve right away, garnished with freshly grated Parmesan cheese, extra parsley, and black pepper.
