2 to 4 tablespoons butter
1/2 tablespoon flour (optional)
1/2 yellow onion or 1/3 cup diced sweet onions
3 to 4 cloves garlic, minced
1/4 cup dry white wine or chicken/vegetable broth
1 to 1 1/2 cups heavy cream
1/2 teaspoon Dijon mustard (optional)
1/4 teaspoon Italian seasoning or 1 teaspoon dried basil
2 medium fresh tomatoes, chopped or 15 ounces tomato sauce or 3 ounces tomato paste
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 to 3/4 cup freshly grated Parmesan cheese
1/2 cup fresh basil, torn or chopped
1/4 cup reserved pasta water

Instructions

1. Cook pasta according to package instructions until al dente, reserving about 1/4 cup to 1 cup of pasta water before draining.
2. In a large skillet, melt butter over medium heat. If making a roux, add flour and stir for about one minute.
3. Sauté onion, red pepper flakes, and garlic until soft and fragrant.
4. Add fresh tomatoes, tomato sauce, or tomato paste, cooking until softened and flavors meld, about 2-5 minutes.
5. Pour in white wine or broth and reduce by half. Whisk in heavy cream, Dijon mustard, and Italian seasoning until smooth.
6. Stir in Parmesan cheese until melted, thickening the sauce. Season with salt and pepper.
7. Toss the cooked pasta into the sauce, adding reserved pasta water to reach desired consistency.
8. Stir in fresh basil before serving. Garnish with extra Parmesan and basil.
