Ingredients

– 3 quarts water

– 1 tablespoon kosher salt, divided

– 8 ounces dried rotini pasta (about 2 ½ cups)

– 3 cups broccoli florets, cut into 1-inch pieces

– 1 pound boneless skinless chicken breast, cut into 1-inch pieces

– ¾ teaspoon black pepper, divided

– 3 tablespoons olive oil, divided

– 2 teaspoons minced garlic

– 1 ½ cups heavy whipping cream (36% milkfat)

– ½ cup unsalted chicken stock or broth

– ½ cup grated parmesan cheese

– 1 teaspoon lemon zest

– 1 tablespoon lemon juice

Instructions

1-First, bring 3 quarts of water to a boil and add 1 tablespoon of kosher salt. Cook 8 ounces of dried rotini pasta until nearly al dente, then add 3 cups of broccoli florets cut into 1-inch pieces to blanch them briefly.

2-While the pasta cooks, season 1 pound of boneless skinless chicken breast, cut into 1-inch pieces, with the remaining kosher salt and ¾ teaspoon black pepper. Heat 3 tablespoons of olive oil in a pan over medium heat and cook the chicken until it’s golden and thoroughly done.

3-Next, in the same pan, sauté 2 teaspoons of minced garlic in the remaining olive oil until fragrant. Add 1 ½ cups of heavy whipping cream and ½ cup of unsalted chicken stock, along with the rest of the black pepper, and simmer to reduce until the sauce thickens lightly.

4-Once the sauce is ready, stir in ½ cup of grated parmesan cheese, 1 teaspoon of lemon zest, and 1 tablespoon of lemon juice off the heat for a fresh finish.

5-Use reserved pasta water to adjust the sauce’s consistency as needed, then combine the cooked pasta, broccoli, and chicken with the sauce. Toss everything together until well coated and serve hot.
