4 red snapper fillets (about 4 ounces each)
3 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon Cajun seasoning for sauce
1 tablespoon butter
1 teaspoon minced garlic
1 cup low sodium chicken stock or seafood broth
14-ounce can diced tomatoes, drained
4 ounces cream cheese, cubed
1 tablespoon fresh chopped parsley
Extra parsley for garnish

Instructions

1. Heat olive oil in a large skillet over medium-high heat.
2. Pat snapper fillets dry and season both sides evenly with Cajun seasoning.
3. Sear the snapper for 2 minutes on each side until lightly browned. Remove and set aside.
4. Discard oil from skillet and wipe clean. Add butter and sauté garlic until fragrant.
5. Add chicken stock, diced tomatoes, cream cheese, and Cajun seasoning. Simmer for about 7 minutes, stirring occasionally.
6. Return snapper to skillet and spoon sauce over the fish. Cook an additional 2 minutes.
7. Garnish with fresh parsley before serving.
