Instructions

1-Preheat the oven: Preheat the oven to 350°F and grease or flour a 9×5-inch loaf pan.

2-Mix wet ingredients: In a large bowl, whisk together 1 large egg, ½ cup packed light brown sugar, ¼ cup granulated sugar, ¼ cup coconut oil, ¼ cup sour cream, and 2 teaspoons vanilla extract.

3-Add bananas: Stir in 1 cup mashed ripe bananas.

4-Combine dry ingredients: Add 1 cup all-purpose flour, ½ teaspoon baking powder, ½ teaspoon baking soda, and a pinch of salt; fold gently until just combined, avoiding overmixing.

5-Fill pan with batter: Pour about two-thirds of the batter into the prepared pan, smoothing the top.
