Ingredients
– 2 tablespoons melted butter
– 2 tablespoons olive oil
– Half a French baguette sliced thin
– 12 ounces fresh cranberries
– 2 tablespoons balsamic vinegar
– 1/2 cup sugar
– 1 tablespoon rosemary
– 4 ounces triple cream brie
– Fresh thyme for garnish
Instructions
1-Preheat the oven: Set to 425°F (220°C). High heat ensures quick crisping.
2-Prep the baguette: Whisk 2 tablespoons melted butter and 2 tablespoons olive oil. Brush both sides of thin slices from half a French baguette. Arrange on a baking sheet.
3-Mix cranberries: Combine 12 ounces fresh cranberries, 2 tablespoons balsamic vinegar, 1/2 cup sugar, and 1 tablespoon rosemary in a bowl. Spread on a parchment-lined rimmed baking sheet.
4-Roast cranberries first: Bake for 5 minutes until starting to burst.
5-Add baguette: Place baguette sheet in oven. Roast both 6 more minutes.
6-Flip and finish: Remove baguette, flip slices, roast 4 to 6 minutes until golden and crispy. Cranberries should be juicy and bursting.
7-Assemble: Top each baguette slice with a slice of 4 ounces triple cream brie and a spoonful of roasted cranberries.
8-Garnish and serve: Add thyme if desired. Serve warm for best texture.
