Ingredients

– 2 cups unbleached all-purpose flour

– Β½ teaspoon salt

– 1 Β½ teaspoons baking powder

– Β½ teaspoon baking soda

– 1 cup sugar

– 1 large egg, well beaten

– 2 tablespoons butter or margarine, melted

– 2 tablespoons hot water

– Β½ cup fresh orange juice

– ΒΌ cup orange zest

– 1 cup fresh cranberries

Instructions

1-Preheat oven and prepare pan as described: First, preheat the oven to 325 degrees Fahrenheit and lightly grease a non-stick bread pan with butter.

2-Mix dry ingredients in one bowl: Sift together the flour, salt, baking powder, baking soda, and sugar into a large bowl.

3-Blend wet ingredients in another bowl: In a separate small bowl, mix the beaten egg, melted butter, hot water, orange juice, and orange zest until moistened.

4-Gently combine and fold in cranberries: Combine the wet ingredients with the dry ones until just moistened, then fold in the cranberries gently.

5-Bake and cool as instructed: Spread the batter into the greased loaf pan and smooth the top. Bake for 60 minutes, then cool completely on a wire rack before slicing.
