Ingredients

– 1 cup sugar

– 5 tablespoons unsalted butter, softened

– 1 cup mashed ultra-ripe banana

– ΒΌ cup milk

– 2 large eggs

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– Β½ teaspoon salt

– Β½ cup chopped nuts (walnuts, pecans, and/or pistachios)

– 1.5 cups coarsely chopped fresh cranberries

Instructions

1-First, get your oven ready by preheating it to 350Β°F and setting the rack in the center for even baking. Grease an 8Β½ by 4Β½ inch loaf pan or line it with parchment paper to make cleanup a breeze.

2-Now, in a bowl, cream together the sugar and softened butter until it’s nicely blended.

3-Next, add the mashed ultra-ripe banana, milk, vanilla extract, and eggs, then mix everything well to combine the wet ingredients. Stir in the dry ones like flour, baking powder, and salt just until the mixture is moist overmixing can make the bread tough. Gently fold in the chopped nuts and cranberries to add that burst of flavor and texture.

4-Spread the batter evenly into your prepared pan and slide it into the oven. Bake for about 1 hour and 10 minutes, or until a toothpick poked in the center comes out clean. Once it’s done, take the bread out of the pan and let it cool on a wire rack for the best results.
