Instructions
1-First, preheat your oven to 400 degrees Fahrenheit and grease a mini muffin pan with cooking spray.
2-In one bowl, mix 1 cup panko bread crumbs, Β½ cup parmesan cheese, and 6 tablespoons melted butter; spoon about 2 teaspoons of this mixture into each muffin cup and press it down to form a crust.
3-In another bowl, combine 8 ounces lump crab meat, 6 ounces softened cream cheese, 1 large lightly beaten egg, ΒΌ cup mayonnaise, Β½ cup sour cream, Β½ teaspoon garlic powder, Β½ teaspoon smoked paprika, 1 teaspoon seafood seasoning, 1 teaspoon lemon zest, 2 teaspoons lemon juice, 1 tablespoon chopped chives, salt to taste, and white or black pepper to taste.
4-Next, gently spoon about 1 tablespoon of the crab mixture on top of each prepared crust in the muffin cups. Be careful not to overfill to keep the bites intact.
5-Once assembled, bake them for 14 to 18 minutes until theyβre golden around the edges.
6-Let them cool for a few minutes before removing from the pan, then top with extra chives and serve with lemon wedges and the optional dipping sauce.
