3 to 4 filet mignon filets or about 1.5 to 2 pounds ribeye, sirloin, or tenderloin
Kosher salt, freshly cracked black pepper, and garlic powder, to taste
Canola or neutral oil, as needed
2 sticks unsalted butter, melted
2 tablespoons minced garlic
2 tablespoons Dijon mustard
1.5 tablespoons chopped fresh parsley
2 teaspoons red chili flakes
1 teaspoon cayenne powder
1 teaspoon lemon juice
1 tablespoon minced fresh chives (optional)
½ teaspoon paprika (optional)
½ teaspoon dried thyme (optional)
2 to 3 cups thinly sliced white or yellow onions
2 tablespoons beef tallow or unsalted butter
Cheese: 8 to 10 slices mozzarella or 1 cup shredded cheese of choice
8 to 12 slider-sized rolls
Melted butter, as needed for brushing
Instructions
1. Grill or sauté the onions in a cast iron skillet with beef tallow or butter over medium heat until deeply golden and caramelized, about 45 to 60 minutes. Set aside.
2. In a bowl, mix melted butter with minced garlic, Dijon mustard, parsley, red chili flakes, cayenne powder, lemon juice, and optional ingredients. Set aside some for basting and brushing.
3. Season steaks with salt, pepper, and garlic powder; coat lightly with oil. Bring to room temperature before grilling.
4. Preheat grill to medium-high (375°F/190°C) with two-zone indirect heat.
5. Grill steaks, 3-4 minutes per side for filet mignon or 4-5 for sirloin and ribeye, brushing with cowboy butter. Aim for internal temp of 120°F for medium-rare. Let rest 10 minutes, then slice thinly.
6. Slice slider rolls; brush with cowboy butter. Layer cheese, steak slices, caramelized onions, and more cheese. Top with buns; brush tops with butter.
7. Place sliders on grill using indirect heat or bake in oven at 375°F (190°C) for 10-12 minutes until cheese melts and buns crisp. Rest 2-3 minutes, then serve with extra cowboy butter.
