🥥 These Coconut Cranberry Cookies offer a delightful chewy texture paired with a sweet and tangy burst from fresh cranberries.
🍪 A wonderful treat for any occasion, they combine tropical coconut and nutty almonds for a unique and flavorful cookie experience.

  • Total Time: 37 minutes
  • Yield: 5 dozen cookies 1x

Ingredients

Scale

1 can (14 ounces) sweetened condensed milk

1 package (14 ounces) sweetened shredded coconut (or a mix with unsweetened for less sweetness)

1 cup white baking chips

1/4 cup ground almonds (can be pre-ground or ground at home)

1 teaspoon almond extract (can substitute with other extracts like orange or lemon)

1 cup chopped fresh or frozen cranberries (frozen cranberries should be chopped or halved)

Instructions

1-Preheat oven to 325°F and line baking sheets with parchment paper to avoid sticking.

2-In a large bowl, stir together the sweetened condensed milk, shredded coconut, white baking chips, ground almonds, and almond extract until the mixture is sticky and well combined.

3-Stir in the chopped cranberries evenly to distribute the tart flavor throughout.

4-Using a tablespoon, scoop the cookie batter into balls and arrange them 3 inches apart on the prepared baking sheets. Gently shape each into a mound, compacting the batter with your hands for better hold.

5-Bake for 10 to 12 minutes or until the edges are lightly browned, then cool on the baking sheets for 3 minutes.

6-Transfer the cookies to wire racks to cool completely and enjoy their chewy texture.

7-Bake in batches, allowing the hot baking sheets to cool before adding the next to prevent burning the bottoms.

Notes

🌟 Press the batter compactly when shaping cookies to prevent them from falling apart.
❄️ If cookie mounds feel loose, chill in the fridge or freezer before baking.
🍒 Use fresh cranberries for brighter color and texture; frozen cranberries offer mellower sweetness.
