Instructions

1-Start: Start by seasoning the bone-in, skin-on chicken thighs or drumsticks with ¼ teaspoon each of salt and black pepper. This ensures the chicken absorbs flavors evenly before cooking.

2-Heat: Heat 1 tablespoon of olive oil in a skillet over medium heat, then add the chicken and brown it on all sides for about 5-7 minutes. This step locks in moisture and builds a great base flavor.

3-Add: Add ½ a small diced yellow onion and 1 minced garlic clove to the skillet, sautéing for 1-2 minutes until fragrant. Then, stir in 12 ounces of cola, ½ cup of ketchup, 1 tablespoon of Worcestershire sauce, 1 tablespoon of brown sugar, ½ teaspoon dried oregano, and ½ teaspoon dry mustard powder to create the sauce.

4-Reduce: Reduce the heat to low, cover the skillet, and simmer the chicken in the sauce for 15 minutes. This allows the flavors to meld and the chicken to cook through partially.

5-Uncover: Uncover and cook for an additional 25 to 30 minutes on medium heat until the chicken reaches an internal temperature of 165°F. For a thicker sauce, mix ⅓ cup water with 2 tablespoons cornstarch to make a slurry, add it to the sauce, and boil for 1 minute before tossing with the chicken.

6-Once done, remove from heat and let it rest for a few minutes. Serve hot with rice and steamed vegetables for a complete meal.
