1 1/2 cups (12 oz / 340 g) mascarpone cheese at room temperature
1/2 cup (4 oz / 115 g) granulated sugar
1 teaspoon vanilla extract
2 cups (16 fl oz / 450 ml) espresso, strong brewed coffee, or strong hot chocolate at room temperature
24 to 30 ladyfingers (homemade or store-bought)
Unsweetened cocoa powder for dusting

Instructions

1. Gently melt the chopped chocolate in a microwave or over a double boiler and allow it to cool slightly.
2. Beat the mascarpone cheese with sugar and vanilla extract in a large bowl until smooth.
3. Whip 2 cups of heavy cream to stiff peaks, then fold it gently into the mascarpone mixture until well combined.
4. Divide the mascarpone cream into two halves. Whisk the melted chocolate into one half to make the chocolate mascarpone cream, leaving the other half plain.
5. Quickly dip ladyfingers into the cooled espresso, coffee, or hot chocolate, about 1-2 seconds per side, to prevent sogginess.
6. Arrange a single layer of soaked ladyfingers in a 7 x 12 inch or 9 x 9 inch deep dish. Spread the chocolate mascarpone cream evenly over this layer.
7. Dip another layer of ladyfingers and place them over the chocolate cream. Top with the plain mascarpone cream.
8. Dust the surface evenly with cocoa powder using a stencil or fine sieve for a professional finish.
9. Refrigerate for at least 4 to 6 hours, or ideally overnight, to let flavors meld and the dessert set properly.
