2 teaspoons baking powder

2 eggs

3 tablespoons canola or vegetable oil (or 45g melted butter)

1 teaspoon pure vanilla extract

½ cup chocolate chips or chunks

Butter or oil for cooking

140 g bittersweet or semisweet chocolate

½ cup heavy cream

Instructions

1-Gathering your ingredients is the first step to smooth cooking, and I love starting with fresh ones for the best results. Begin by sifting together the flour, cocoa powder, baking powder, and salt in a large bowl this helps everything mix evenly and keeps the pancakes light.

2-In another bowl, whisk the eggs and sugar until they’re well combined, then add in the milk, oil or melted butter, and vanilla extract. This wet mix brings moisture and flavor that makes the pancakes irresistible. Pour the wet ingredients into the dry ones and stir just until moistened, being careful not to overmix, as that can make them dense.

3-Gently Folding and Cooking the Batter Once the batter is ready, gently fold in the chocolate chips to keep that airy texture. For the chocolate ganache sauce, combine the chocolate and heavy cream in a heatproof bowl and microwave in short bursts, stirring often until it’s smooth and glossy.

4-Heat your griddle or skillet over medium heat and grease it with butter or oil. Pour about ¼ cup of batter for each pancake and cook for 1-2 minutes until bubbles form on top. Flip them and cook another 1-2 minutes until they’re done. Keep the cooked pancakes warm under foil while you make the rest, re-greasing the skillet each time.

5-Serving and Variations Serve your warm pancakes topped with that luscious ganache sauce, and if needed, reheat the sauce for the perfect drizzle.
