6 ounces dark or bittersweet chocolate, chopped
1 ½ cups powdered confectioners sugar
½ cup all-purpose flour
½ cup cocoa powder

6 large egg whites (about ¾ cup)
Instructions
1-First, preheat your oven to 375°F (190°C) and grease your madeleine pans thoroughly.
2-Melt the remaining butter and chopped chocolate in a double boiler or heatproof bowl over simmering water until smooth.
3-Sift together the powdered sugar, flour, cocoa powder, and salt to blend evenly.
4-Beat the egg whites until very frothy, about 2 minutes, for a light texture.
5-Stir the sifted dry mixture into the egg whites, then blend in the melted chocolate mixture.
6-Fill each pan cup with about 1 heaping tablespoon of batter and chill in the refrigerator for one hour.
7-Bake in the preheated oven for about 12 minutes until the madeleines are springy to the touch.
8-Cool in the pan for 1 minute, then remove to a rack to cool further.
9-Serve warm or at room temperature for the best flavor.
