1 teaspoon baking soda

1 and 1/2 teaspoons cornstarch

1/2 teaspoon salt

3/4 cup (170g or 12 tablespoons) unsalted butter, melted and cooled for 5 minutes

3/4 cup (150g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

1 large egg plus 1 egg yolk, both at room temperature

2 teaspoons pure vanilla extract

1 and 1/4 cups (225g) semi-sweet chocolate chips or chunks

Instructions

1-Whisk together the flour, baking soda, cornstarch, and salt in a large bowl and set aside.

2-In a separate bowl, whisk the melted butter with the brown sugar and granulated sugar until smooth. Add the egg and egg yolk, then the vanilla extract, mixing well.

3-Pour the wet ingredients into the dry ingredients and combine carefully using a spoon or spatula. Fold in the chocolate chips.

4-Cover the dough and chill for at least 2 hours or up to 3 days to prevent spreading and promote thickness.

5-Preheat the oven to 325°F (163°C). Line baking sheets with parchment paper or silicone mats.

6-Scoop the chilled dough using about 3 scant tablespoons (2 ounces) per cookie for extra-large sizes, or 2 heaping tablespoons (1.75 ounces) for medium-large cookies. Shape the dough into tall, lumpy cylinders rather than smooth balls.

7-Place the cookies 3 inches apart on the prepared baking sheets.

8-Bake for 13 to 14 minutes, until the edges are lightly browned but centers remain soft (they will firm up while cooling).

9-Cool the cookies on the baking sheet for 10 minutes before transferring to a wire rack. Optionally, press extra chocolate chips onto the warm cookies for enhanced appearance.

10-Store cookies covered at room temperature for up to one week.
