Ingredients
– 150 grams spaghetti
– 200 grams prawns (king, tiger, or shrimp, peeled and deveined)
– 3 cloves garlic, finely chopped
– 1 teaspoon dried crushed chili flakes (adjustable to taste)
– 2 tablespoons unsalted butter
– 1 tablespoon olive oil
– 2-3 tablespoons finely chopped parsley
– 1 tablespoon freshly squeezed lemon juice
– 1 teaspoon salt (or to taste)
– 1/2 teaspoon black pepper (or to taste)
– 1 cup reserved pasta cooking water (starchy, salted)
– 3-4 tablespoons grated Parmesan cheese (or hard cheese) for garnish
Instructions
1- Getting Chilli Garlic Prawn Pasta just right starts with a little preparation, and I love how simple it is to whip up. First, boil salted water and cook 150 grams of spaghetti according to the package instructions; remember to reserve 1 cup of that starchy, salted pasta water before draining. This step is key because that water helps create a silky sauce later on.
2- Next, grab a pan and sauté the 200 grams of peeled and deveined prawns in 2 tablespoons of melted unsalted butter over medium-high heat until they’re pink, which takes just a minute or two. Season them with 1 teaspoon of salt and 1/2 teaspoon of black pepper, then set them aside to keep them tender. In the same pan, add a bit more butter and quickly sauté the 3 finely chopped garlic cloves on low-medium heat, followed by the 1 teaspoon of dried crushed chili flakes for that spicy kick.
3- Now, add the cooked spaghetti to the pan along with 1/2 cup of the reserved pasta water, and season again with a bit more salt and pepper if needed. Return the prawns to the pan, pour in the 1 tablespoon of freshly squeezed lemon juice, and toss everything evenly to mix the flavors. Finish it off with a drizzle of 1 tablespoon of olive oil and the 2-3 tablespoons of finely chopped parsley for a fresh touch.
4- Finally, serve your Chilli Garlic Prawn Pasta hot, garnished with 3-4 tablespoons of grated Parmesan cheese and a little extra parsley. The whole process takes about 15 minutes total 5 minutes prep and 10 minutes cooking making it ideal for busy nights. For a creamy twist, you can stir in heavy cream after sautéing the garlic and chili, as mentioned in the tips.
