Ingredients
– 3 cups chopped cooked chicken
– 16 ounces sour cream
– 1 (10.5-ounce) can cream of chicken soup
– 1 (1-ounce) packet ranch seasoning mix
– 1 cup chopped cooked bacon
– 2 cups shredded cheddar cheese
– 1 (30 to 32-ounce) bag frozen tater tots
Instructions
1-First step: Preheat and prep the baking dish Start by preheating your oven to 350 degrees Fahrenheit. Lightly spray a 9 by 13-inch pan with cooking spray so the casserole does not stick. This small step makes serving much easier later. If you are using a disposable foil pan for freezing, spray that too.
2-Second step: Mix the filling In a large bowl, combine the chopped cooked chicken, sour cream, cream of chicken soup, ranch seasoning mix, chopped cooked bacon, and shredded cheddar cheese. Stir everything until it is evenly mixed. The filling should look thick, creamy, and well coated. If you want to add vegetables, this is the best time to fold in sautéed mushrooms or frozen green beans.
3-Third step: Add the tater tots Fold the frozen tater tots into the chicken mixture. You want them coated, but not smashed. The tots will soften a bit as they bake, and the outside will crisp up in the oven. If you prefer a thicker topping, you can also place some of the tots on top after spooning the mixture into the pan.
4-Fourth step: Spread into the pan Spoon the mixture into the prepared baking dish and spread it out evenly. Try to keep the layer level so the casserole bakes at the same speed all the way across. If you are making this ahead, you can stop here, cover the dish, and refrigerate it until you are ready to bake.
5-Fifth step: Bake until bubbly Bake uncovered at 350 degrees Fahrenheit for 40 to 45 minutes. The casserole is done when it is hot, bubbly, and the top is lightly golden. If your oven runs cool, it may need a few extra minutes. If you want a little more browning on top, you can broil it briefly at the end, but keep a close eye on it so the tater tots do not burn.
6-Final step: Rest and serve Let the casserole sit for about 5 minutes before serving. That short rest helps it firm up a little, so the portions come out cleaner. Serve it hot and pair it with a simple salad, steamed vegetables, or fruit for a balanced meal. It is also great with bread if you want something extra hearty.
